How to Make Hominy

I have my lime water on now, will let it rest 5 hr. and strain it.
I'm hoping to make it for Thanksgiving dinner at the neighbor's tomorrow, i'm making it from corn from the garden. should be good! fingers crossed, will keep you posted. LOL

let us know how it works out for you spacecase.
I'm thinking of trying it and using lye.
I've made pretzels before with lye and they are delicious. You just have to be careful. I like the taste actually.
I made mine from that recipe but I don't think I cooked it quite long enough. I've got the corn so will try again.

I watched that video last year and took notes. I'm growing Indian corn this year and have plenty of ashes. ;) I'll let you guys know how the venison hominy stew works out probably in November. 8-)

I know what you mean about waiting a year to eat something,
I did that with a corn that ended up failing...
it is 3 years later and I will get a harvest this year,
I should get about 5 gallons of flour corn kernels this fall and it will be made in to cookies only 4 years after I started planning.

I have been making hominy for a while now,
and using lime (Calcium hydroxide) to do it, ( and I don't think that I will be going to the more expensive lye )
it works good, but I don't think I was using enough of it...
I have been using a quart of dried dent corn, and 1/4 cup lime,
I am going to try a batch with 1/2 cup lime and see if changes it any

as far as cooking time,
I have found out that it should be in the pot for 5 hours at least,
even if the heat is only on for the first 15 min.

I never even heard of hominy before your post, Pamela. I love learning something new. Thanks! Especially this process from your first link:

What is Hominy?
True hominy (the term is often misused) is dry corn that has been soaked and cooked in an alkaline solution to remove the hulls. The process is known as nixtamalization and it: improves the nutritional value of corn, removes fungal-mycotoxins from stored corn, improves the taste, and makes the kernels easier to grind. There's a lot more detail on Wikipedia.
