Excellent. That is good experience/confirmation.

Just prior to Y2K, I recall that Bob, of "Bob's Red Mill" fame, said he tried baking bread with old wheat, and it turned out flat and lifeless.
Perhaps Bob was using wheat that wasn't nitro-packed.

I bucketed my hard red winter wheat using the dry ice method she mentioned. :)
